Unsweetened sushi vinegar is also known as genmai su or rice vinegar. You can use it not just to season sushi rice but also to make delicious dressings, add liquid to stir-fry dishes or slightly mask too much salt. Also delicious in combination with other Japanese seasonings, such as shoyu, tamari and sesame oil, or with the sweet counterparts ginger syrup and mirin. Sushi vinegar is brewed using authentic Japanese techniques.
